No D.O. (Ribeira Sacra), Spain - Mencía, with minor additions of other local varieties, grown in the stony vineyards of the Ribeira Sacra region. Winemaking begins with a hand-harvest and a natural vinification process that minimizes intervention in the winery: the grapes are fermented with native yeasts without fining or filtration, using a light maceration, almost like an infusion, to extract aromas and colors without harshness. After fermentation, the wine undergoes an aging period of approximately six months, enough to stabilize and round out the fruit without losing freshness, before bottling. In terms of style, Simple offers a fresh and floral profile, with vibrant fruit, marked acidity, and a light mouthfeel that reflects the Atlantic character of the vineyards and the identity of the Galician terroir. PABLO SOLDAVINI SIMPLE 2024

Pablo Soldavini is an independent winemaker and rising star in the Ribeira Sacra region of Galicia, whose work has gained recognition for its direct approach to viticulture and artisanal winemaking. Originally from an area where many old vineyards were abandoned, Soldavini has reclaimed and cultivated plots on steep slopes of gneiss, granite, and schist, between towns such as Lumeares, A Teixeira, and Cristosende. He cultivates approximately 3 hectares spread across more than 20 old vines with indigenous blends of red varieties (such as Mencía, Merenzao, Brancellao, Mouratón, Garnacha Tintorera, and Caiño) and white varieties (Godello and Palomino). His almost poetic name—"Soldier of the Wines"—reflects both his personal commitment to the land and his working style, which prioritizes the health of the grapes in the vineyard so that he can intervene as little as possible in the winery and thus accurately express the identity of the landscape and the vines in each wine. This approach is based on organic and biodynamic farming practices, hand-harvesting, and vinification with indigenous yeasts without artificial corrections, which has allowed him to become one of the most respected producers among the new generation of natural winemakers in the Ribeira Sacra.
