AOC. Champagne, France - 50% Chardonnay, 50% Pinot Noir. The Pinot Noir comes from the Les Monts des Tours vineyard in Bouzy, and the Chardonnay from Les Argentières in Tauxières-Mutry; both vineyards are located in the Montagne de Reims, a region renowned for its chalky soil and its ability to impart energy and minerality to Champagnes.
The production of Violaine 2020 reflects Lahaye's most radical philosophy: organic and biodynamic farming, fermentation and aging without additives or chemical intervention, and no added sulfites at any stage (totally sulphur-free). The wine ferments with indigenous yeasts in used oak barrels, both alcoholic and malolactic fermentation, and remains on its lees for at least 48 months in the bottle before disgorgement (April 2025) without fining or filtration. After disgorgement, it is presented without dosage (Brut Nature), offering an exceptionally pure and direct expression of the terroir and the vintage.
In the glass, Violaine 2020 unfolds a complex and vibrant aromatic profile where aromas of crisp red fruits, violets, dried orange peel, and a light touch of toasted sesame intertwine with vegetal and spicy notes that add dimension. On the palate, it reveals intense energy and finesse, saline tension and a silky texture, with a marked minerality that harmoniously and profoundly extends the finish. Its character is both precise and sensual, with both breadth and vivacity.
