A.O.C. Champagne, France - 100% Chardonnay from biodynamically cultivated vines planted in 2000, on Kimmeridgian limestone soils with unusual western exposure. This results in a very slow ripening of the Chardonnay. Yields are very limited, as the vines are pruned very selectively to only 5 bunches per vine.
Fermentation with indigenous yeasts in used Burgundian oak barrels. Aging in the same barrel for 10 months and subsequent bottle aging for approximately 2 years. Unfiltered, unclarified, and with very low total SO2 levels, around 20 mg/l. No dosage, Brut Nature. Disgorging date: 02-12-2024
Intense but fine and floral on the nose, like a fine Chablis. The palate is round but dry, firm and mineral, leading to a long, tense, well-structured, and very salty finish. This is a great combination of ripe, lush fruit, elegance, finesse, and iodine flavors. Recommended by The Sommelier.
