AOC Champagne (Côte des Bar), France - 100% Pinot Noir made from a blend of several plots belonging to different winegrowers in the Aube region, with organically certified vineyards (Ecocert), all with Kimmeridgian calcareous soils, on mid-slope, with a northern exposure (hence the name Boréal). Fermentation with indigenous yeasts and aging in 500L barrels. Between 18 and 24 months of aging on the lees, unfiltered and unfined, zero dosage. A single-vintage Champagne. Benoit Dussot, of Burgundian origin, is a faithful follower of the character of each vintage. He does not add any reserve wine to the cuvée, nor does he add dosage. The key is the grapes; all the most important tasks are carried out in the vineyard. Recommended by The Sommelier.
