CORPINNAT (Alt Penedès), Catalonia - Xarel-lo and Chardonnay grapes are grown on the slopes of the Ordal mountain (Subirats), a steep clay-limestone area that gives the grapes a unique character, distinct from the rest of the Penedès region. This area, difficult to access and with limited production, is cultivated using sustainable practices and organic treatments. The grapes are harvested by hand at their optimal ripeness. In the winery, the Xarel-lo and Chardonnay grapes are vinified separately with native yeasts. The base wines are then blended, and the second fermentation takes place using the traditional method, followed by a minimum aging of 36 months (equivalent to a Gran Reserva). No sulfites or dosage are added. The result is a creamy sparkling wine with citrus aromas, notes of white fruit, and hints of fennel. On the palate, it is refined, light, and elegant. A Corpinnat with fine, integrated bubbles thanks to its long aging in the cellars, a very pleasant freshness, and a smooth, fruity finish that makes it very persistent on the palate.
