FERRET ORGANIC BRUT NATURE
Ferret is a small, family-run winery located in the Penedès region, within the Cava DO, that has committed to producing organic Cava with a philosophy based on respect for the vineyard and traditional grape varieties. Their project focuses on sustainable viticulture, with organic certification, avoiding herbicides and synthetic products, and working to obtain healthy grapes that allow for minimal intervention in the winery. Ferret seeks to express a fresh, clean, and direct style of Cava, with special attention to the purity of the fruit and the balance between acidity and aging.
The Organic Brut Nature Cava is made from classic Penedès varieties, specifically 40% Parellada, 30% Macabeo, and 30% Xarel·lo, from vineyards cultivated using organic practices. These varieties, well-adapted to the Mediterranean climate, yield balanced base wines with good acidity and a fresh aromatic profile, ideal for producing traditional-style sparkling wines.
Vintage: In Cavas without a specific vintage (NV), as is usually the case, the aim is to achieve a consistent style rather than reflect a specific harvest. The climatic conditions of the Penedès region, with warm summers and full ripening, allow for the production of base wines with good structure, while the altitude and the influence of breezes help maintain freshness.
Winemaking: Hand-harvested or mechanized depending on the plot, gently pressed, and fermented in stainless steel tanks. Secondary fermentation in the bottle using the traditional method, followed by 24 months of aging on the lees. As it is a Brut Nature, no dosage is added, resulting in a drier and more defined profile.
Tasting Notes: Pale yellow color with golden highlights and fine, persistent bubbles. On the nose, it offers notes of white fruit (apple, pear), citrus, and subtle hints of bakery from aging on the lees. On the palate, it is dry, fresh, and light, with marked acidity, a clean mouthfeel, and a crisp finish, without any sweetness due to the absence of dosage.
Best before: 2025-2027. ABV: 12%
Production: 25,000 bottles.
Pairing: Very versatile, ideal as an aperitif and with seafood, white fish, sushi, or lightly fried dishes. It also pairs well with Iberian ham, fresh cheeses, or low-fat Mediterranean dishes. Served between 6°C and 8°C, it best appreciates its freshness, vibrancy, and clarity.
