AOC. Champagne, France - 70% Pinot Noir, 30% Chardonnay from clay-limestone soils in the Côte des Bar. The base wine was aged for 8 months on its fine lees in temperature-controlled stainless steel tanks and, after the second fermentation, aged on the lees for at least 24 months. Jérémy Bardiau is a talented young winemaker who will soon be making waves. This cuvée is the Preface, the wine that will make you want to discover the other cuvées. A very rich and fresh Champagne, beautifully balanced with a light residual sugar and a limestone minerality that makes your mouth water. Pair it with smoked salmon, seasonal fish with vegetables, as an aperitif, or even after a meal—it will be wonderful thanks to the light residual sugar that makes it so versatile.
