Peixes is the new project of Carlos Bareño and Jesús Olivares (Fedellos do Couto) in the foothills of Alto Bibei, on the mountain between the Ribeira Sacra and Valdeorras. The philosophy of viticulture is the same as for Fedellos do Couto, maximum respect in the field, they do not use chemicals and the intervention is the minimum possible. Peixe da Estrada 2016 ferments with its native yeasts and is aged in French oak barrels of various uses for 12 months.
