AOC. Champagne, France - 100% Chardonnay from vines over 50 years old.
Emmanuel Lassaigne crafts this "blanc de blancs" from his small vineyard in Montgueux. Located on a limestone hill ("craie") ten kilometers west of Troyes, Chardonnay reigns supreme across his 5.75 hectares of vineyard, a stark contrast to the vineyards of the Côte des Bar, where Pinot Noir predominates. He uses no pesticides, fertilizers, or synthetic products. The presence of grass between the rows creates significant competition for nitrogen, as weeding reduces nitrogen availability in the soil. Hand-harvested grapes from the "Le Cotet" plot, on the easternmost slope of the Montgueux vineyard. Yield: 60 hl/ha. Gentle pressing, vinification in stainless steel tanks. Aged on the lees for 24 months. Later blending with between 2% and 5% champagne from previous years. Manual disgorgement, without the addition of sulphur or dosage.
