Each plot was vinified separately with its native yeasts with some whole clusters (50% to 75%) in plastic bins and concrete tanks, with 20% of the wine made by carbonic maceration, which was a tradition in Tacoronte-Acentejo. The wine matured in 228-liter oak barrels for eight months. 5,500 bottles and 100 magnums. It was bottled in July 2021. 97 Parker in the previous vintage. 2025 not rated yet.

Philosophy
Envínate is the project of four winemakers —Roberto Santana, Alfonso Torrente, José Ángel Martínez and Laura Ramos— brought together by a shared interest in expressing the character of individual vineyards and traditional grape varieties. Their approach focuses on careful vineyard work, respect for local conditions and restrained intervention in the cellar. In Tenerife, this philosophy produces fresh, mineral-driven wines that reflect their Atlantic origins rather than relying on excessive ripeness or prominent oak.
Winemaking and vintage
The winemaking and grape origins of La Santa de Úrsula 2025 are rooted in three plots of century-old vines in La Corujera. The grapes are hand-harvested, and each plot is vinified separately using indigenous yeasts. The winemaking combines whole-bunch fermentation with a portion of carbonic maceration, helping preserve aromatic freshness and a delicate texture. After blending, the wine spends approximately eight months on its lees in used 228-litre French oak barrels. The ageing adds depth while allowing the fruit and vineyard character to remain at the forefront.

Volcanic soils with basalt and clay, combined with the Atlantic climate, contribute to the wine’s freshness and distinctive personality. The 2025 blend consists of 50% Listán Negro, 48% Negramoll and 2% Listán Blanco. Listán Negro provides structure and character, Negramoll contributes finesse and red-fruit expression, while the small proportion of Listán Blanco adds aromatic lift and freshness.
Tasting note
La Santa de Úrsula 2025 is fragrant and elegant, with aromas of red cherry, redcurrant, forest berries and aromatic herbs, complemented by mineral and spicy nuances. The palate is fresh, fluid and delicate, with lively acidity, fine tannins and a silky texture. Clear fruit flavours lead into a balanced finish marked by freshness and mineral notes. This is an Atlantic red that favours finesse, energy and terroir expression over sheer concentration or power.
Food pairings
Pair it with roast poultry, rabbit, white meats, quality cured meats and mushroom dishes. It also works beautifully with flavourful rice dishes, grilled vegetables and oily fish. Its freshness and fine tannins make it versatile at the table, including with dishes that can be challenging for fuller-bodied reds. Serve slightly chilled, at around 14-16°C.
