Jacques Lassaigne "Les Vignes de Montgueux"
Montgueux chardonnay is a hill outside the stunning city of Troyes, approximately midway between the Côte de Sézanne and Côte des Bar. Once the solid reputation of this city vanished in the course of the twentieth century when Jacques Lassaigne and some others started a renaissance in the 1970s, had only a remnant of old vines in the Clos St. Sophie, where they are kept immaculate since the nineteenth century and whose vines inform the son of Jacques in the recent bottling Emmanuel. (The 2011 and 2012 and fascinate barrel) When Emmanuel Lassaigne took over the winery, pledged to disclose Montgueux through sustainable wine regime without fertilizers and a combination of restraint and firm principle in the basement - a low dose of sulfur, without filtration, low pressure, primary environmental fermentations, disgorging by hand without freezing the cap - which would fit with their unique stylistic vision. "I do not want demonstrative wine" is how he says it, but a translation as "flashy" or "ostentatious" might be closer to the mark. The appearance of low pressure of these wines is not only in the opinion of Lassaigne a virtue in itself - promoting the tenderness of texture and nuance - it also mitigates the alcohol, that on steep slopes and in much of southern exposed to Montgueux is not an insignificant concern.
