AOC. Champagne (Côte des Blancs), France - 100% Chardonnay from vineyards in the prestigious Grand Cru of Le Mesnil-sur-Oger in the Côte des Blancs, characterized by calcareous (chalky) soils that impart tension, minerality, and finesse.
Vinification takes place in temperature-controlled stainless steel tanks, aiming to preserve the aromatic purity of the variety. Complete malolactic fermentation is standard, which contributes to the wine's roundness.
The cuvée incorporates reserve wines, ensuring continuity of style and complexity, and is subsequently aged on its lees for at least 5 years in underground cellars carved into the chalk, where the second fermentation in the bottle occurs.
The dosage is Extra-Brut (approximately 3 g/l), seeking a balance between freshness and breadth.
Disgorgement: 02/2025
Tasting Notes:
On the nose, it displays a precise, elegant, and very classic Le Mesnil profile, with a predominance of citrus notes (lemon, grapefruit), white flowers (acacia, rose), and a slightly brioche and hazelnut background derived from aging on the lees.
On the palate, it is a Champagne with a creamy attack but marked tension, where the acidity supports the whole and provides verticality. The bubbles are fine and persistent, with a development that combines freshness, chalky minerality, and subtle hints of pastry. The finish is long, clean, and saline, very representative of the character of the great Blanc de Blancs from the Côte des Blancs.
This is a style that prioritizes elegance, precision, and finesse over power.
