D.O. Ribeiro, Galicia - Brancellao, Ferrol, Caíño Longo and Caiño Redondo on steep granite slopes in the village of Arnoia. The grapes are de-stemmed and fermented with their native yeasts in a stainless steel tank. with a maceration of 3 weeks with 2 punchings a day. It is then aged in new and semi-new French oak barrels for 12 months, without clarifying or filtering. It remains in the bottle in the cellar for 3 years before its commercialization. A Torna dos Pasás Escolma 2021 is a concentrated red with a lot of ripe red and black fruit, violets, black olives, meaty and spicy notes, some earthy notes that reminds us wines of Cornas in the Rhone. The palate has a very good structure and acidity, polished and silky tannins with a long length. Recommended by The Sommelier.

A TORNA DOS PASÁS ESCOLMA 2021

Luis Anxo Rodríguez is, in our opinion, the spiritual father of the Galician "wine revolution". When quality wines were not yet produced in Galicia and the objective was to produce high-yielding wines, Luis Anxo began to produce wines with indigenous varieties, with the aim of demonstrating their potential to produce distinctive wines worthy of aging. Luis Anxo, a slow and humble man, studied philosophy and enology at the school of enology in Madrid and on his return, in 1988, he began to elaborate in the place of Os Pasás, in Paixón (Arnoia), restructuring old vineyards of foreign varieties of Palomino and Garnacha Tintorera to the old traditional varieties of Ribeiro. He was a visionary, and proof of this is in his wines; We do not know so old wines in Galicia that have evolved as well as the Luis Anxo wines. You can still taste bottles from the 90s, 2000s and 2001 in great shape. Since its inception, it has remained faithful to its philosophy of making wines that show their full potential over the years, just as great wines do, oblivious to passing trends, and today, this recognition is unanimous in the world of wine.

Luis Anxo works 5 Ha., 3.7 Ha in the Arnoia valley and 1.3 Ha in Rivadavia, spread over some 100 micro plots. The soils are mostly decomposed granite sand. The vines are between 10 and 50 years old and only work with native varieties, Treixadura, Albariño, Lado and Torrontés for whites and Brancellao, Caíño Longo, Caiño Redondo and Ferrol for reds. It only includes some of the native Sousón and Garnacha Tintorera in its basic red Eidos Ermos. His philosophy in the vineyard is to maintain balance. It does not use herbicides or insecticides, although it does use fungicides because Mildew is a latent pathogen in the Ribeiro. The treatments are applied only if absolutely necessary, and never during the month before the harvest, to help preserve the native yeasts existing in the grapes that help initiate spontaneous fermentation.
