AOC Champagne (Côte des Bar), France - 50% Pinot Noir, 40% Chardonnay, and 10% Pinot Meunier from several organically certified plots in the Côte des Bar. During vinification, part of the must ferments in used Burgundy barrels and the remainder in stainless steel tanks, with malolactic fermentation occurring naturally and without excessive intervention. After fermentation, the wine remains on its lees (sur lie) until bottling, which took place on April 28, 2023, and was subsequently aged in the bottle until disgorgement in March 2025, thus ensuring more than two years of aging on the lees before release. The Champagne is presented without fining, filtration, added dosage and SO₂ addition, resulting in a very dry style (Brut Nature) that highlights the purity of the fruit, a lively acidity and a marked minerality of the terroir.
