AOC Champagne (Côte des Bar), France - 100% Chardonnay from a plot cultivated organically and biodynamically in Ville-sur-Arce, in the Côte des Barinâmica. The Ville-sur-Arce terroir sits at an altitude of 234 meters, on light clay soils mixed with a deep Kimmeridgian limestone subsoil. This matrix imparts a pronounced minerality and a vivacity typical of limestone slopes to the wine. The harvest is done by hand. Fermentation is natural, using indigenous yeasts, without additives. Aging takes place for 12 months in 500-liter barrels, followed by 15 months of aging on racks. Disgorgement is not followed by dosage, always respecting the pure expression of the vintage.
