AOC. Champagne, France - 94 PARKER. 100% biodynamic Pinot Noir from the Bétins et Roles Tortues plots of the Grand Cru de Bouzy in the Reims mountains. Fermented with native yeasts and aged in 16 and 25 hl oak foudres with perpetual solera since 2003. For Benoit Lahaye, dosage (around 3-4 g) is important for aging, as it achieves greater champagne evolution over time. An intense champagne, with vinosity, concentration, and structure provided by the Pinot Noir de Bouzy. A perfect archetype of the terroir of this southern part of the Reims mountains.
