JULIEN BROCARD PETIT CHABLIS LES PLANTES 2022
The Brocard family owns one of the most important collections of vineyards in Chablis. They work more than 150 hectares and, since 1997, more than half are worked in organic agriculture, which is unusual in such extensive properties. Julien Brocard is a son of the domain family. A few years ago he decided to produce a range of high-quality wines called 7 Lieux, a selection of 7 biodynamic wines divided between a Petit Chablis, two Chablis, three Premier Crus (Côte de Lechet, Vaudevey and Montée de Tonerre) and the Grand Cru Preuses . He also makes a natural Chablis with minimal doses of sulfur.
Julien seeks to precisely express the purity of the different terroirs of Chablis. To do this, the production only uses native yeasts and a pneumatic press where different pressures are applied depending on the conditions and maturity of the fruit. The wines ferment and age in large Stockinger wooden vats and foudres of between 15 and 100 hectoliters depending on the size of the plot.
