D.O. Ribera del Duero, Spain - 100% Tinto Fino (Tempranillo) from the "Monasterio" plot, of just 1.6 Ha. Planted at more than 870 m. in Gumiel del Mercado in the province of Burgos. It is a special estate, a hillside facing south, located in the closest lands where the old monastery of San Cucufate was located. The soil is calcareous clay and the plantation rows are oriented north-south, giving rise to very good maturations, achieving high levels of tannins and polyphenols, and therefore wines with a good aptitude for long aging. San Cucufate is a great aging wine, where the great terroir speaks for itself. The fermentation is carried out in cement, with a whole bunch, and the aging in used barrels and large oak barrels.
