Manual harvest, destemmed grapes, maceration for 3 to 5 days, alcoholic fermentation with indigenous yeasts for 18-20 days. Aged for 16 months in oak barrels (20-30% new). Not clarified or filtered. Minimal use of sulfur. In our opinion, one of the basic wines of burgundy of the highest level, with a precision and definition difficult to find in other more renowned producers.
