AOC Champagne (Côte des Bar) - 80% Pinot Noir from their sole owned plot, an old vineyard planted on Portlandien soil in 1971 in the village of Polisy, with limestone-clay Kimmerdgian soils, and 20% Chardonnay on Portlandien soil. Hand-harvested, direct-pressed, alcoholic fermentation with native yeasts in foudres, without the addition of sulfites, and bottled with yeasts from the same vintage. Aged for 23 months in 15-hl foudres, then aged in stacks for 15 months before disgorging.
