DOC. Bairrada, Portugal - Bical and Arinto. A Portuguese white wine of great freshness and personality, crafted in the Bairrada region by renowned winemaker Filipa Pato in collaboration with William Wouters. Made from the indigenous Bical and Arinto varieties, this white wine perfectly reflects the Atlantic and calcareous character of the Bairrada vineyards.
Filipa Pato works under a philosophy of minimal intervention and biodynamic agriculture, seeking "unadulterated" wines that purely express the Portuguese terroir. The grapes come from vineyards situated on clay-limestone soils with a strong oceanic influence, just 15 kilometers from the Atlantic.
Bical contributes texture, depth, and mineral notes, while Arinto adds tension, acidity, and citrus freshness. The varieties are harvested separately and fermented with indigenous yeasts; a small portion of the wine ages in large French oak barrels to gain complexity while maintaining the purity of the fruit and the wine's characteristic salinity.
On the nose, it unfolds aromas of lemon, pear, green apple, Mediterranean herbs, and delicate hints of iodine and minerals. On the palate, it is vibrant, elegant, and very food-friendly, with a creamy texture balanced by precise acidity and a long, dry, and saline finish.
Filipa Pato Dominica Branco 2019 represents the most authentic and refined style of contemporary Portuguese Atlantic whites. Ideal for pairing with seafood, fish, Asian cuisine, rice dishes, soft cheeses, and Mediterranean gastronomy.
