Anaga, North of Tenerife - Vineyard of centennial vines in free standing where Listan blanco predominates, with other varieties such as Malvasía, Forastera, Marmajuelo, Albillo Criollo, Vijariego Blanco, Gual on volcanic soils of black basalt, most of which come from the area of Chavarria and Margalagua in Taganaga. Each plot is vinified separately from the grape maceration for a maximum of 24 hours. Later it is pressed and goes to concrete tanks and open polyethylene vats where it ferments spontaneously with its native yeasts. Once the alcoholic fermentation is finished, they leave the wines for a few days to clean them from the fat lees and they are transferred to neutral French oak barrels (70% of 228 l. And 30% of 600 l.). Finally, the wine is statically fine-tuned in the barrels until May 2023, that is, about 8 months, without any racking or “battonage”. In May the different terroirs are assembled and bottled in June 2024. Táganan white 2018 has a golden color, on the nose it gives slightly subtle oxidative and maceration notes such as beeswax, fruit and yellow flower, quince, wild flowers, with a tipical volcanic minerality. The palate shows light body, a lot of intensity and sapidity, salinity with depth and length. A delight for those of us who like unconventional wines. Recommended by The Sommelier.
ENVÍNATE TÁGANAN WHITE 2025
Envínate Táganan Blanco 2025 is a distinctive Atlantic white wine from Taganana, in the Anaga massif on the northeastern coast of Tenerife. Created by Alfonso Torrente, José Ángel Martínez, Laura Ramos and Roberto Santana, Envínate has become one of Spain’s most compelling wine projects thanks to its interpretation of old vineyards, indigenous grape varieties and the volcanic landscapes of the Canary Islands. Táganan Blanco captures the character of a rugged coastal region, where vines grow on steep slopes close to the Atlantic Ocean.
Philosophy
Envínate champions respectful viticulture and minimal-intervention winemaking, seeking to preserve the identity of each vineyard and the expression of local grape varieties. Manual vineyard work, careful harvesting and spontaneous fermentation with indigenous yeasts help produce wines that faithfully reflect their origins. Táganan Blanco stands out for its freshness, saline character and mineral depth, offering a distinctive expression of Tenerife’s volcanic landscape.
Winemaking and Vintage
The winemaking and grape origin of Táganan Blanco 2025 are closely linked to the old vineyards of Taganana and its surrounding area. The grapes are hand-harvested and carefully selected before vinification. Individual parcels are fermented separately, using indigenous yeasts and spontaneous fermentation. Depending on the parcel, concrete tanks, stainless steel and wooden vessels are used, with restrained intervention to preserve the character of the site. The wine spends approximately eight months ageing on fine lees in neutral vessels and used oak barrels. It is bottled unfined and unfiltered, with a small addition of sulphur dioxide.
Vineyard and Grape Varieties
Táganan Blanco is a field blend of indigenous white grape varieties from the Canary Islands, including Listán Blanco, Malvasía, Marmajuelo, Gual, Albillo and Forastera, alongside other local varieties. The vines grow on steep volcanic slopes under the constant influence of the Atlantic Ocean. Old vines, volcanic soils, varietal diversity and maritime conditions combine to create a white wine with remarkable individuality, freshness, tension and mineral character.
Tasting Note
The nose reveals white fruit, citrus and wild flowers, accompanied by herbal nuances and smoky, mineral notes. Dry, fresh and vibrant on the palate, it combines lively acidity with depth and texture. A pronounced saline quality and volcanic character lead into a long, persistent finish. This is a complex, expressive food wine that offers a distinctive interpretation of Tenerife’s landscape.
Pairings
An excellent match for grilled fish, shellfish, seafood rice dishes, ceviche and raw fish. It also pairs beautifully with Japanese cuisine, Asian-inspired dishes and mild goat’s cheese. Its freshness and saline character make it particularly well suited to ingredient-led cooking and seafood.
