La Palma, Canary Islands - 100% Listán Blanco.
This is one of the most personal and representative wines of Victoria Torres Pecis's work in the south of La Palma. It comes from a single historic vineyard located in Las Machuqueras, Fuencaliente, within an extreme volcanic landscape where traditional Canarian viticulture reaches one of its most authentic and unique expressions.
The wine is made entirely from Listán Blanco grapes from old vines between 40 and 120 years old, grown ungrafted on steep volcanic slopes. The vines, trained using a low-density trellising system supported by forks, are part of a private massal selection maintained by the winemaker, reflecting the island's historical plant heritage and a cultivation method deeply rooted in La Palma's Atlantic landscape.
The winemaking process follows a philosophy of minimal intervention and absolute respect for the vineyard. The harvest is done by hand, and vinification includes oxidative maceration with skins and whole clusters for a variable duration of between two and four days, followed by gentle pressing. Fermentation occurs spontaneously with native yeasts and without temperature control. Subsequently, the different wines were blended in stainless steel in 2022 before continuing their aging in 600- and 1,200-liter chestnut vats, a traditional aging method that contributes complexity and texture while respecting the wine's volcanic and Atlantic character.
The aging process combines chestnut vats and stainless steel tanks, seeking to preserve the tension and mineral purity of the wine without masking its varietal character or origin. The result is a natural, tranquil, intense, and structured white wine of enormous depth and strong territorial personality.
On the palate, Las Machuqueras displays a complex and highly expressive profile, where saline notes, hints of ripe white fruit, dried herbs, citrus peel, and volcanic and smoky nuances coexist. On the palate, it is ample, deep, and vibrant, with an enveloping texture, great Atlantic energy, and a marked minerality that lingers in a long and precise finish. Its analytical parameters reflect a dry and very defined style, with 12.5% alcohol, a pH of 3.53, very low sulfur dioxide content (<20 mg/l), and barely 0.3 g/l of residual sugar.
The result is a singular wine with a strong identity, reflecting both the geological complexity of La Palma and Victoria Torres's sensitivity to an artisanal, extreme, and deeply connected viticulture rooted in the Canary Islands. Recommended by The Sommelier.
