La Palma, Canary Islands - 100% Listán Blanco from eight different plots located in the southernmost part of the island of La Palma, in the Canary archipelago. The vines, mostly ungrafted and of advanced age, are situated at a high altitude ranging from approximately 350 to 1,100 meters above sea level. These plots are planted on young volcanic soils, very poor in organic matter, light, and with excellent drainage, which necessitates low-density cultivation and extremely manual viticulture, with traditional low-track training supported by forked branches.
The harvest is carried out entirely by hand and in stages, integrating the different plots over approximately three weeks, according to the ripening process at each altitude. Winemaking is adapted to each origin: some plots are gently pressed directly with whole clusters, while others undergo brief skin maceration of between two and four days before pressing. Alcoholic fermentation is spontaneous, carried out with native yeasts and without temperature control, seeking the most faithful expression possible of the vineyard.
Aging takes place for approximately 10 months on the lees in concrete tanks, which imparts texture and depth without the aromatic influence of oak, thus preserving the purity of the varietal character and volcanic origin. The result is a natural, still, profound, and markedly mineral white wine with a balanced technical profile, presenting approximately 12.5% alcohol, a pH of 3.5, very low sulfur dioxide levels (<20), and a residual sugar content of 1.63 g/l.
