Legrand-Latour Éocène Brut Nature 2021 is a cuvée that precisely expresses the character of the Vallée de la Marne through a blend of 75% Pinot Meunier and 25% Chardonnay. Made by the Legrand-Latour family from organically farmed vineyards in the towns of Verneuil and Vandières, this champagne reflects a pure and transparent interpretation of its terroir.
The name Éocène refers to the geological period that gave rise to much of the region's sedimentary soil. Marl, clay, and fossilized marine deposits contribute to the wine's distinctive minerality, lending depth, tension, and a notable salinity.
The winemaking process follows a minimal intervention philosophy. The base wines are aged for twelve months in oak barrels on their fine lees, promoting a natural integration of structure and greater aromatic complexity. After the second fermentation in the bottle, the wine is presented as Brut Nature, without dosage, allowing the expression of the vineyard and the vintage to manifest itself without artifice.
On the nose, it unfolds aromas of ripe apple, pear, fresh citrus, white flowers, and hints of toasted bread. With aeration, notes of almond, damp chalk, and delicate spicy nuances emerge. On the palate, it stands out for its fine bubbles, its enveloping texture, and a vibrant acidity that provides freshness and precision. The prominence of Pinot Meunier contributes breadth and fruity character, while the Chardonnay reinforces the verticality and elegance of the whole.
