Legrand-Latour Yprésien Brut Nature 2021 is a grower's champagne that precisely expresses the unique terroir of the Vallée de la Marne. Made from Meunier and Pinot Noir grapes from the Vandières and Verneuil areas, this cuvée takes its name from the Yprésian geological period, characterized by soils rich in marl, fine sand, and fossil clays that impart a distinct mineral character to the wine.
Legrand-Latour's philosophy is based on respectful viticulture and minimal intervention winemaking. The grapes ferment with native yeasts, and the wine is aged for approximately twelve months in oak, followed by more than thirty months on its lees in the bottle. The complete absence of dosage allows the character of the soil and the purity of the fruit to express themselves without artifice.
In the glass, it displays a complex and elegant nose with notes of citrus, fresh red apple, dried flowers, aromatic herbs, and crushed stone. The palate is distinguished by its fine bubbles, precise texture, and a vibrant saline tension that runs across the palate to a long, mineral, and profoundly gastronomic finish.
