D.O. Bierzo, Spain - 100% Godello from several century-old plots located in areas such as Villafranca del Bierzo, Arganza, and San Clemente, between 650 and 700 meters above sea level. These vines, many of them over a hundred years old, are planted in clay and sandy soils, with very low yields, resulting in a raw material of great concentration and character.
The winemaking process follows a line very consistent with the winemaker's philosophy: hand-harvesting, destemming, and gentle pressing, with natural settling of the must for about 24 hours, followed by fermentation in 500-liter French oak barrels, without strict temperature control or the use of commercial yeasts. Subsequently, the wine remains in these same barrels for approximately 12 months of aging on its lees, without bâtonnage, seeking to preserve the tension and purity of the wine without excessive intervention. The result is a Godello with a serious and profound profile, intended for aging, where the oak acts as a refining element rather than the protagonist.
In tasting, La Salvación 2024 presents a subtle, elegant, and fresh nose, with notes of white and yellow fruit (apple, pear, stone fruit), accompanied by citrus nuances and a slightly toasted and nutty background from aging. On the palate, it is a balanced, ample, and very precise wine, with well-integrated acidity that provides freshness and tension, and a rich texture thanks to lees aging. The finish is particularly noteworthy for its mineral and saline character, long and persistent, leaving a clean and profound sensation that defines the wine's style.
