D.O. Bullas, Spain - 100% natural Garnacha from vineyards around 20 years old, located in clay soils with calcareous gravel at an altitude of approximately 750 meters, which favors balanced ripening and a clean Mediterranean expression.
Winemaking begins with hand-harvesting and complete destemming of the bunches. Alcoholic fermentation takes place with indigenous yeasts in stainless steel tanks with maceration for about 15 days and several gentle pump-overs to extract color and structure. After complete fermentation, the wine undergoes spontaneous malolactic fermentation in used 500L French oak barrels, where it remains for approximately 11–12 months before bottling. It is neither fined nor filtered, thus preserving all its vitality and natural character.
In tasting, this 2022 Ninja de las Uvas offers a fruity and juicy profile, with aromas of fresh red fruit (cherry and pomegranate) accompanied by notes of Mediterranean herbs such as rosemary and thyme. On the palate, it stands out for its balance, rounded tannins, and a spicy finish, with nuances reminiscent of vanilla or coffee derived from aging in oak barrels. It is a vibrant, expressive, and easy-drinking wine among Spanish natural reds.
Its name, Ninja de las Uvas (Ninja of the Grapes), plays on the idea of something light and fast, like the Garnacha grape that makes it, and represents the most accessible and carefree expression of Julia's project in Bullas. Recommended by The Sommelier.
