AOC. Champagne, France - 80% Pinot Noir, 20% Chardonnay from the Le Mont Tauxières vineyard, a southeast-facing plot of just 0.5 hectares in Bouzy, co-planted with Pinot Noir and Chardonnay in 1966. The winemaking follows the artisanal, minimal-intervention approach that characterizes the domaine: the grapes are hand-harvested, fermented with indigenous yeasts, and part of the aging takes place in foudres or used oak barrels, which helps develop complexity without compromising varietal purity. After the first fermentation and aging on the lees, the wine remains in the bottle for just over four years before disgorgement in June 2025, allowing for slow evolution and a smooth integration of flavors. In its Extra Brut style, the amount of sugar added after disgorgement is very low (typically around or below 3 g/l), resulting in a dry, taut, and mineral Champagne where the fruit and natural acidity predominate.
In the glass, the 2020 Millésime Extra Brut displays a pale yellow color with fine, persistent bubbles. Aromatically, it combines notes of ripe white and yellow fruits (such as peach and apricot), hints of citrus and fine brioche, along with a pronounced crayeuse minerality that reflects the chalky terroir of the Montagne de Reims. On the palate, it offers freshness, breadth, and tension with a long, saline finish, balancing the richness and precision typical of terroir-driven Champagnes, especially when Pinot Noir dominates the blend.
