D.O. Toro, Castile and León - 90 PARKER. 90% Tinta de Toro (Tempranillo) from 25-40 year old vines and 10% Garnacha from 60-year-old vines from the Guareña and Valdefinjas valleys, the southernmost area of the D.O. Toro, with an average altitude of 750 meters and predominantly sandy soils (Quaternary sandstone). The grapes are hand-harvested, fermented with whole stems and indigenous yeasts in stainless steel tanks, and undergo a gentle maceration of approximately two weeks to extract color, fruit, and structure without harshness. After fermentation, the wine ages for 6 to 8 months in foudres (large French oak barrels) or neutral barrels of varying sizes, which imparts texture and roundness without overpowering the varietal and terroir expression. The result is a red wine of approximately 14% alcohol, medium-bodied with juicy red fruit, spicy and herbal notes, good acidity and soft tannins, a profile that makes it accessible but with the presence and character of the Castilian landscape where it originates.
