D.O. Toro, Spain - 94 PARKER (Luis Guitierrez). Majority Tinta de Toro (Tempranillo), with some Grenache, Mencia, Verdejo, Malvasia and various unknown grapes, all from an ungrafted plot of 3 ha biodynamically worked and planted by Aciano, the grandfather of the winemaker Alvar de Dios (Marañones). "El Pego" is located on the southern edge of the D.O. Toro, away from the river Duero. The soils represent high sand content, close to 98%, filled with medium sized pebbles on Quaternary sandstones. Cold pre-fermentation for 3-4 days fermentation with indigenous yeasts in large vats and barrels for 12 months. Unfiltered and unclarified. A Rara Avis in the zone made with poor extraction, with high finesse and subtlety with all the complexity of old vines. Recommended by the sommelier.
