D.O. Ribeira Sacra, Spain - 94+ Mencia, Mouratón, Merenzao, Garnacha shark and Caiño. New project born from the union of four winemakers, Paul Soldavini, Bareño Carlos, Luis Taboada and Jesus Olivares located in Castro Caldelas (sub Ribeira do Sil) where made in a beautiful cellar of more than 150 years. Ares is a two Lomba River wine, vinified separated each plot and assembled after aging. Its name refers to the hill that crowns the whole river Bibei plots with which the wine is made. 60 years old vines at 550 and 750m high on slate, schist and granite soil. The climate is Mediterranean with atlantic influence. Aged for 12 months in old French oak barrels of various sizes and demi-muids prior to assembly. Alc. 12% vol. Recommended by Sommelier.
