D.O. Rías Baixas, Galicia - 100% Albariño from 3 plots of 3 winegrowers. Ferreira plot with granitic soils located in Sanxenxo, Salgueira plot with clay soil and Choqueira plot with loamy-sandy soil of granite origin located in Meaño. Manual selection of the bunches in the vineyard. Transfer to the winery in boxes of 15 kg. Grapes are foot trouden and macerated for 48 hours with skins and 100% stalks. Pressing the whole bunch in a low pressure pneumatic press. Alcoholic fermentation with its own yeasts, without settling, at a controlled temperature and without the addition of any type of product except sulphurous in barrels recovered from Galician old chestnut, over 90 years old, of 1,900 l. and French oak barrels from 2008 (Boutes cooperage) of 500 l. Weekly "Batonnage" for 3 weeks and aging on its lees for 7 months until bottling. Bottling without cold tartaric stabilization, without clarification, rough filtering and sulfurous in moderate doses. Production: 2,560 bottles and 30 magnums.
