D.O. Rías Baixas, Galicia - 95+ PARKER. 100% Albariño from a single plot within the estate, featuring the oldest vines, traditionally trained on trellises or pergola systems, with low yields that concentrate the fruit. The grapes are hand-harvested, and in the winery, spontaneous fermentation takes place with native yeasts, without temperature control, allowing the varietal aromas and the complexity of the soil to be faithfully captured. After fermentation, the wine ages for approximately 18 months in a 1,500 L foudre and 6 months in stainless steel tanks to gain texture and depth before bottling. Excessive intervention is not sought at any stage; the aim is to allow the vibrant acidity, the characteristic salinity of the Salnés region, and the structural complexity of the vineyard plots to fully express themselves in the bottle. 13.15% Alcohol - pH: 3.19 - Total Acidity: 7.96 g/L. Bottled in October 2024, 2,000 bottles were produced.
