Whole grapes undergo a step to extract the must in an open chestnut fudre. Alcoholic fermentation begins spontaneously. Once finished, the wine continued in contact with the solid parts for two weeks. After pressing, the wine undergoes aging for 12 months in used French oak barrels. The palate has abundant fine grain tannins, with a certain rusticity, and is full of character. 1,300 bottles produced.
