AOC. Côtes du Jura, France - 100% Savagnin from vines located in Cesancey, facing southwest and planted on white calcareous marl, one of the most characteristic terroirs of the southern Jura. After hand-harvesting, the grapes are gently pressed and fermented with indigenous yeasts. The wine is aged for approximately 10 months in demi-muids and neutral barrels before being bottled unfined and unfiltered, with minimal use of sulfites.
