D.O. Rías Baixas, (Val do Salnés sub-zone), Spain - 100% Albariño from the same plot as Xesteiriña, in Lugar da Xesteiriña (A Vichona) in the municipality of Sanxenxo. The difference is basically that Xesteiriña comes from the flower must, the first pressing, and Do Biolo from the final part of the press, which with the experience and good intuition of Jose Manuel is practically imperceptible compared to Xesteiriña. Ultra-gentle settling of less than 24 hours with a homeopathic dose of sulphur. From here it goes directly to a 300 l. stainless steel tank and a 225 l. Bordeaux oak barrel for various uses, where alcoholic fermentation started spontaneously with the yeasts themselves and without temperature control. The wine was aged for 8 months and the two tanks were blended. It is sulphited with a very low dose (15 mg total). It is not sulphited again. Second vintage of this great Albariño with a notable qualitative leap compared to its first vintage 2022. The expression and energy of Do Biolo 2023 is truly impressive. Recommended by El Sumiller.
