The harvest is manual and in the plot a selection of grapes is made, which are despalled and fermented in an open stainless steel tub, where the fermentation takes place. Once completed, a daily pigeage is performed for 4 weeks. With this long fermentation-maceration an infusion of the grapes in the wine is sought to extract color and aromas. Aged for 12 months in a 500-liter French oak cask of the third year where it performs malolactic fermentation. Galician land flavor, deep and disturbing. Subtle notes of aromatic and balsamic herbs. Its tasty rusticity and vibrant acidity mark the personality of this wine.
