Sin D.O. (Cebreros) - 100% Garnacha from old vines in a vineyard located in the area of "Navalhorno", polygon 25, plot 183, in the municipality of El Hoyo de Pinares (Ávila), at an altitude of 1,010 meters. Vinified in stainless steel tank of 1000 liters, pre-fermentation of 3 days before the alcoholic fermentation with the own native yeasts of the vineyard, no correction or contribution was made to the must. Post-fermentation of 7 days before a light pressing and passage to used French oak barrels where malolactic fermentation takes place.
