Sancerre D.O. (Loire), France - 100% dry, highly expressive Sauvignon Blanc produced by Domaine Gérard Boulay in the Sancerre D.O., located in the Loire region of France. It comes from the "La Grande Côte" terroir of Chavignol, one of the appellation's most prestigious areas, with vines planted on Kimmeridgian marl and fossil-rich limestone soils, which impart a pronounced minerality and structure to the wine.
This 2015 Sancerre is made entirely from Sauvignon Blanc, the region's emblematic white grape variety, and is the result of hand-harvesting and viticultural practices focused on respecting the natural balance of the vine and soil, with low yields and minimal intervention.
As for its production, after a meticulous harvest, the grapes are gently pressed and the must ferments traditionally, often spontaneously or in previously used barrels, to avoid imposing a new oak character. The wine ages for about a year in second- or third-use barrels before bottling, which helps preserve its freshness and varietal purity without masking the minerality of its origin.
