Swartland, South Africa - 91 PARKER. A blend of 65.5% Chenin Blanc, 17.5% Clairette Blanche, 5.2% Grenache Blanc, 4.7% Sémillon Gris, 4% Viognier, and 3.1% Verdelho, sourced from eight sustainably farmed plots with vines up to 66 years old. The grapes were chilled prior to being pressed as whole clusters. The must was left to settle overnight and then fermented in barrels using indigenous yeasts—a process that lasted approximately eight weeks. Malolactic fermentation was allowed to occur naturally.
The wine remained on its lees in barrel until spring, which aided in the integration of its components and the development of a more complex texture. Subsequently, the wines from the various plots were blended and bottled unfiltered. The wine was aged for approximately ten months in 500-liter French oak barrels (third- to fifth-fill) and one new 2,000-liter *foudre* (large oak vat).
