La Palma, Canary Islands - 94 PARKER. 100 Negramoll from a group of historic plots located in Fuencaliente, on the island of La Palma (Canary Islands), specifically from the Tinizara, Garome, Jerónimo, Mayata, and Las Machuqueras vineyards. These vines are situated between 1,270 and 1,400 meters above sea level, in an extreme environment of highly diverse volcanic soils, ranging from younger sandy loams in the southwest to more mature compositions with clay content in the northwest. These are old vines, mostly ungrafted, trained using traditional bush vines or low-trained systems supported by forks, with very low planting density and our own massal selection.

The harvest is carried out in an extremely parcel-by-parcel and staggered manner, with each vineyard vinified separately, in a process that can extend up to sixty days in the winery, following the natural evolution of ripening according to altitude and sun exposure. The winemaking process is artisanal and respectful, using whole clusters, traditional foot treading, gentle maceration of 8 to 15 days, and delicate pressing. Fermentation occurs spontaneously, without temperature control, seeking a pure expression of the terroir and each individual plot.

Aging takes place in a combination of wooden vessels of varying sizes, including 500-liter French oak foudres, 600-liter American oak casks, and 225-liter French oak barrels. This combination adds complexity without compromising varietal identity or the freshness of the volcanic origin. The result is a wine with a strong terroir character, reflecting the extreme diversity of its origin and the precise, minimally intervened winemaking process. Recommended by The Sommelier.
