D.O. Valdeorras, Galicia - 100% Godello, the region's most emblematic white variety, renowned for its ability to combine freshness, minerality, and aromatic complexity. The grapes come from plots such as La Mallada and Valella, located on the slopes of Seadur-Larouco on fragmented, sandy, and stony granite soils, at an average altitude of around 450 meters, which favors balanced ripening and excellent varietal expression. The harvest is done by hand, with bunch selection on a sorting table before destemming and gentle crushing. After a brief cold pre-fermentation maceration, the must ferments in stainless steel tanks at a controlled temperature (around 16–18 °C) to preserve freshness and varietal aromas. The wine is then aged on its fine lees for about six months, with periodic bâtonnage (weekly stirring), which gives it structure, volume, complexity, and a smoother texture without losing its characteristic freshness.
