D.O. Ribera del Duero, Spain - 40% Tempranillo, 40% Viura, 10% Other white varieties, 10% Other red varieties. This wine comes from our own vineyards, between 80 and 180 years old, located at 600 meters above sea level. These are old vines of indigenous white and red varieties, cultivated biodynamically and certified by Demeter. The grapes are destemmed and gently crushed before macerating for 5-8 days in concrete tanks. Alcoholic fermentation begins spontaneously there, using native yeasts. Finally, the wine is racked and aged on its lees in old 225-liter barrels for 9 months. Once ready, the wine is bottled unfined, unfiltered, and without added sulfites.
