The production of Lavaux-Saint-Jacques Premier Cru follows traditional and meticulous practices: the grapes are hand-harvested with cluster selection in the vineyard; after cold maceration prior to fermentation, alcoholic fermentation takes place with indigenous yeasts in concrete tanks or traditional vats, allowing the fruit and acidity to integrate smoothly. Aging typically lasts around 18 months in French oak barrels, with a proportion of new wood tailored to the wine's character to provide structure without masking the varietal and terroir expression. Since 2014, the estate has neither fined nor filtered its wines to best preserve the intensity, texture, and aging potential that characterize the great reds of the Côte de Nuits.
