La Seca, (Castile and León), Spain - 100% Verdejo from a single 3.6-hectare vineyard (majuelo) planted in 1999, facing north, and sown in 2001. The soil is richer in clay, grey marl, and limestone bedrock, with fewer pebbles on the surface, which contributes to the wine's freshness and minerality. The harvest is entirely manual, with the grapes collected in small crates to preserve their integrity. In the winery, the bunches are pressed whole, and the must ferments spontaneously with indigenous yeasts in used 500–600-liter French oak barrels without temperature control. After malolactic fermentation, the wine remained in these barrels for approximately 11 months before spending another 7 months aging in stainless steel tanks, always maintaining minimal intervention (no fining or filtering) to preserve the expression of the terroir. The result is one of this winery's most unique expressions: a structured white wine with a rich texture, aromatic complexity, and pronounced minerality, reflecting both the Verdejo variety and its vineyard and careful aging.
