After fermenting in Jerez boots, it is aged for 8 months in selected boots with the presence of a flower veil in the last 2 months.
Cota 45 is the project of Ramiro Ibáñez, a prestigious winemaker from San Luis, advisor to different wineries in Marco de Jerez.
The Cota 45 winery is located in an old boat workshop, in Bajo de Guía, the magical beach of Sanlúcar de Barrameda. Here Ramiro Ibáñez produces his wines, younger, with less aging, with recovered indigenous varieties and experimenting with the different soils of albariza (the typical white soil of Jerez, calcareous and with very good water retention).
With Cota 45, Ramiro aims to redo the chamomile as before, without heading and with shorter aging, giving all the prominence to the terroir and the personality of each payment. That the expression of the grape is marked by the soil, the climate and the vintage, that the aging only accompanies what is just and necessary to complement and enhance the character of the terroir.
