The region of Sauternes, within the wine region of Bordeaux, with permission from the Tokaji of Hungary and some botrytized riesling from Germany and Austria, is the cradle of the best sweet white wines in the world, being one of the wines with the greatest capacity of aging of the world. They are naturally sweet wines, no liquor is added and all the sugar and alcohol in the wine comes from the fermentation of the must. The particularity of these wines is that the over-ripening and dehydration of the grapes are produced in the plant, by a phenomenon called "noble rot" caused by the fungus Botrytis Cinerea. This fungus is the same as the cause of the unwanted gray rot, however Sauternes has special climatic and geographical conditions where noble rot or noble Botrytis develops. First of all the noble botrytis requires that the grapes be fully ripe. Second, wet mornings are necessary. In the autumn, when the weather is temperate and dry, the different temperatures of the two rivers when uniting produce mists that descend through the vineyards from sunset until well into the morning favoring the development of the fungus in the grapes. The fungus pierces the skin of the grape with its microscopic filaments, leaving tiny holes in the skin. Sunny and warm afternoons paralyze the development of the fungus and the evaporation of the water of the grape takes place concentrating acids, aromas and sugars. The fungus also creates its own aromas in the grape.
