AOC. Saint-Bris (Burgundy), France - 100% Sauvignon Gris (also called Sauvginon Rosé) commonly called “Fié Gris” for being a variety whose leaves are reminiscent of the wild vinifera, it is a clone of pink berries that comes from a natural mutation of the Sauvignon Blanc. Its low-yielding nature (on average it yields 35-40% less than Sauvignon Blanc) sealed its fate and it is now only found in a few vineyards. The Goisots have persevered their old Fié Gris vines and now flourish in a warm neighborhood of the commune, on the Côte de la Canne, Cornevin and Moury, vineyards rich in red and brown clays of Kimmeridgian limestone origin. Goisot notes that Fié Gris's ability to maintain its freshness makes it perfect for its northwest-facing vineyards where Sauvignon Blanc tends to over-ripen.
The must is fermented in a stainless steel tank at room temperature and indigenous yeasts and then aged in 500-liter oak barrels (15% new).
It has a clean straw color. The nose is austere at the beginning and opens the aromatic palette with oxygenation with notes of apricot, claudian plum, lime zest, Granny Smith apple, subtle herbs on a mineral background of chalk, rifle stone. On the palate it has a medium structure, waxy texture, well balanced by the magnificent crunchy acidity and the marked limestone minerality (flint) with a long finish of good persistence. A rarity in Burgundy, exuding personality and authenticity in abundance. Recommended by The Sommelier.
