ENVÍNATE PALO BLANCO 2025
Envínate Palo Blanco 2025 is one of Tenerife’s finest Atlantic white wines and one of the most distinctive expressions of the project founded by Alfonso Torrente, José Ángel Martínez, Laura Ramos and Roberto Santana. The wine comes from the Los Realejos area in the Valle de La Orotava, in northern Tenerife, a landscape shaped by Atlantic influence, volcanic soils and an exceptional heritage of old Listán Blanco vines. Envínate’s approach is centred on expressing the identity of the vineyard and its native varieties with minimal intervention.
Philosophy
Envínate’s philosophy is based on interpreting each vineyard and landscape with as little intervention as possible, producing wines that are fresh, precise and deeply connected to their origin. Manual vineyard work, the avoidance of synthetic chemical products and the use of indigenous yeasts are central to this approach. In Palo Blanco, this philosophy is particularly evident through the old Listán Blanco vines and Tenerife’s unmistakable volcanic and Atlantic character.
Winemaking and Vintage
The winemaking and grape origin of Palo Blanco 2025 begin with 100% Listán Blanco from old vineyards in northern Tenerife. The grapes are hand-harvested and selected in the vineyard. After one to two days of maceration, the whole clusters are pressed without destemming. Alcoholic fermentation takes place spontaneously with indigenous yeasts in concrete tanks without temperature control. The wine then spends around 12 months ageing in 2,500-litre oak foudres. The result is a minimally intervened wine, bottled without fining or filtration, with the wood adding texture without masking the character of the vineyard.
Vineyard and Variety
Palo Blanco is made from 100% Listán Blanco grown on vines more than one hundred years old. The vineyards are located around Los Realejos in the Valle de La Orotava, at high altitude and under strong Atlantic influence. Some of the oldest vines are between 120 and 160 years old, with individual vines dating back to before 1880. The combination of altitude, slow ripening, old vines and volcanic soils produces grapes with remarkable freshness and tension.
Tasting Note
Bright straw-yellow in colour. The nose combines white fruit, green apple and pear with floral aromas, aromatic herbs and pronounced mineral notes. Dry, fresh and vibrant on the palate, with citrus-driven acidity and a precise texture leading to a long, saline and mineral finish. The volcanic and Atlantic character is particularly expressive, giving the wine depth and remarkable tension.
Pairings
Excellent with shellfish, grilled fish, seafood rice dishes, ceviche, Japanese cuisine and raw fish preparations. It also works particularly well with goat’s cheese and dishes where the wine’s freshness and saline character can shine.
